Fillet with Pepper Cheese
Sauce
1 Fillet per person*
Cooked to your preference
Pepper Cheese Sauce
2 TBS Oil*
1 small leek OR 1 onion thinly sliced*
1 cup chicken stock*
4oz Pepper Jack Cheese cut into small cubes*
Sauté leek in medium pan (about 3 minutes), add stock and cheese. Stir until
cheese is melted (about 2 minutes). Serve spooned over steaks.
This is an outstanding combination and you can actually use the cheese sauce
with any steak. Fillets are always great but the recipe will work equally
well with a grilled sirloin. This is even a good sauce to use with grilled
Chicken.
We also have the recipe for Grilled steak with Blue Cheese on the web site
but not everyone likes the pungent flavor of Blue Cheese. This recipe is
milder but has a slight “kick” from the Pepper Jack Cheese.
One key is to use a good quality Pepper Jack Cheese. We offer the BoarsHead
Pepper Jack Cheese and it is perfect for this recipe since it is well
balanced between the cheese and peppers and it melts nicely.
