Corn pudding
1 stick butter *
5 cups frozen corn *
3 eggs *
1/2-cup milk
1 cup half and half
1-cup ricotta cheese *
1 T sugar
1 T salt *
¾ pepper *
1 cup shredded cheddar *
Heat oven 375.
Grease corning dish (large enough to fit above ingredients)
Sauté corn in butter for 4 minutes.
Beat eggs, milk, half and half in a large bowl.
Add ricotta, sugar, salt, and pepper.
Add corn mixture and ¾ cup of the cheddar cheese.
Pour into corning dish.
Sprinkle the reminder of cheese on top.
Place this dish inside another dish, just a little larger and fill half way
up with water.
Bake for 45 minutes or until top turns golden brown.
Insert a knife in the middle to see if it comes out clean.
